Besides, you just have 30 minutes in hand to whip up a spicy chicken side dish with some gravy. Never mind, this simple and instant chicken curry recipe is sure to get you going!
Easy Indian Chicken Curry
You will need
Chicken legs – 6 or Boneless chicken – 1/2 kg
Garlic – 25 pods
Fennel seeds – dry roasted and ground to a fine powder – 1 tsp
Onion – 2 (chopped)
Tomatoes – 2
Coriander leaves – 2 medium cups
Mint leaves – 1/2 small cup
Red chilly powder – 1 tsp
Curd – 1 cup
Salt – 1/2 tsp
Cooking oil – 3 tbsp
Easy Chicken Curry
Clean the chicken legs/boneless chicken pieces and keep aside. Make a paste of garlic pods, fennel powder, yoghurt, mint leaves, red chilly powder and salt. Marinate the chicken with this paste for 5 minutes. Grind chopped onions and tomatoes to a fine paste.
Heat 2 tbsp cooking oil in a fry pan. Add the onion-tomato paste and saute for 2 minutes. Add the chicken pieces. Turn them over so that they are evenly covered with the onion tomato gravy. Cover the pan and cook over low flame for 15 minutes. After 15 minutes, turn the chicken pieces, add some 1 tbsp oil and cook for 10 minutes on low flame without covering the pan.
Do not add water as the chicken pieces release water when cooked. Continue cooking till the gravy reaches a thick consistency. Garnish with lots of chopped coriander leaves/ cilantro.
